Dead Finish Distillery

About Us

Dead Finish Distillery is a micro distillery located in Reservoir, Melbourne, Australia and was born out of a long passion for craft concepts and the ability to be able to create something from scratch.  Founded in 2019 by Jonathan Harris with a passion to realise the dream of creating a distillery, whilst working with quality botanicals and ingredients to make products that are based on quality not quantity. With two stills named “Beauty and the Beast” devoted to proudly making quality white and dark spirits for you to enjoy on any occasion. There are currently no distillery tours or cellar door but this is in the master plan.

Acacia Tetragonophylla (Dead Finish)

Dead Finish Acacia-tetragonophylla

Dead Finish (Acacia Tetragonophylla) is a native Australian wattle tree with needle type phyllodes with yellow ball shaped flowers. The name “Dead Finish” came about because it is ideally suited to withstand Australia’s droughts, winds and bushfires. The resilience of the wattle represents the spirit of the Australian people.

The first day of September is National Wattle Day. It builds on a long unofficial tradition of wearing the wattle blossom on 1 September. The Golden Wattle (Acacia Pycnantha Benth) is an evergreen small tree. When in flower, the Golden Wattle displays the National Colours in green and gold and a symbol of unity.
